penne dish

penne with salmon


Cooking involves creativity which comprises reinventing existing dishes. For example, penne is usually cooked using tomato or cream as a base or it can be cooked with garlic and drizzled with olive oil. In this post, I’d like to share a special recipe which involves stir fried penne. This dish has a combination of texture and colour and a mixture of taste. It is on the whole a delicious and healthy meal, comprising the three food groups.   



  • 1 slab of salmon
  • 1 onion, sliced
  • 3 cloves of garlic, chopped
  • 2 cups penne
  • 1/4 cup pine nuts
  • handful of baby spinach
  • 2 tablespoons olive oil
  • 1 tsp. chilli flakes
  • 1 tbsp. soy sauce
  • 1 tbsp. lemon juice
  • pepper



1. Heat up oil in a frying pan.

2. Fry the salmon till cooked. Remove and set it aside.

3. Cook penne in a pot filled with boiling water. Once el dente, drain the penne in a colander.

4. Heat oil in a pan and fry onions and garlic.

5. Once onion becomes transparent and garlic is slightly browned, add penne in the pan. Mix well.

6. Add baby spinach and stir the mixture well.

7. Season with pepper and chilli flakes.

8. Add lime juice and soy sauce mix well.

9. Add pine nuts to give the dish some texture and crunch.

10. Serve with whole cooked salmon or break salmon in small bits and mix them with the penne.


The result is a tasty, wholesome and savoury penne dish that the whole family can enjoy. Omit the chilli flakes if you prefer not to have the added kick. Garnish with coriander or fried shallots.
