TASTY DATE SCONES

I love home-made scones. Recently, I’ve dabbled in baking date scones and have perfected them after a few attempts. I’m delighted with the product and must say I will never buy commercial ones again. For one, it is a rip-off at $2.40 a piece at the local bakery. For another, they contain preservatives and anti-caking agent which can be unhealthy in the long-run.

Here is the recipe for my special home-made scones:

Ingredients

2 cups self-raising flour

1 tsp heapful baking soda

50g butter, cut into squares

3/4 cup caster sugar

3/4 cup milk

1 egg

1/2 cup chopped dates

Method

1. Pre-set the oven to 180 degrees celcius.

2. Grease baking tray with butter.

3. Put in flour, baking powder and sugar in a bowl and mix.

4. Add in the butter and rub in till well-mixed.

5. Make a well in the middle and add egg and dates.

6. Add in milk bit by bit to ascertain the consistency of the dough.

7. Mix the dough well and roll it on a board with a rolling pin.

8. Form the dough into a rectangle shape and ensure that it is about 3cm thick.

9. Cut into 8 or 9 squares.

10. Place each square on the baking tray and place it in the oven for 20 minutes.

Makes 8-9 scones.

Serve with jam and cream.

It is more satisfying to indulge in homemade scones despite having to deal with a messy kitchen top, sticky dough and hands and flour spillage. I must say it is so quick and simple to make nonetheless.
