I was tempted to purchase sweet potatoes on my usual grocery shopping expedition one afternoon. The bright purple ones caught my eyes and oh my aren’t they huge. So I picked one fat tuber and thought how good it would taste when boiled. Sweet potatoes are less starchy than potatoes, at least that’s what I think. They contain only 7gm of fat per 100gm. It has less calories than the normal potato and contains more fibre. Since they are rich in Vitamins A and C, they contain plenty of antioxidants.
However, the plan to boil the sweet potato was dismissed. Instead, I had this gnawing urge to fry the purple tuber yesterday. I have not had fried food for two months now that I have moved to another city to stay on my own. Since then, sandwiches and stir frys are the most convenient of all types of food as they take minutes to prepare and less hassle to handle. It also means less oily mess to clear.
I happily sliced the gigantic tuber and coated each slice in batter before frying. The result was not too bad, though I thought I could have coated the batter with some breadcrumbs for better batter coverage. Since, the tuber slices were fried from a raw state, it was best to leave them in the oil for several minutes to ensure that they were soft enough to be consumed. It is best to use healthy cooking oil with less calories like grapeseed (which is what I am using for my cooking needs) and canola (which my mum has great reliance on). Ta da………here is the result of my fried sweet potato slices. The taste was terrific and it is best eaten hot. The batter gave a mild and subtle peppery taste and it contrasted with the natural sweetness of the purple tuber flesh.
Making the batter is easy peasy. Pour 1 cup flour in a bowl and a dash of salt and water. Sprinkle some white pepper in the mixture and blend them in with a spoon. Ensure that the batter is not too diluted or it won’t stick nor too thick for this will result in too much oil being soaked up by excessive batter.
If you don’t like fried food, sweet potatoes can be eaten boiled. It is just as tasty as it has got its natural sweetness. It can also be used in stir frys when they are best diced or in vegetable curry dishes.
