Today I feel like baking some pies. It’s a lazy Sunday so it’s just the right day for indulgence. It’s simple to make and uses only 3 ingredients – onions, mushrooms and onions.
Ingredients
puff pastry sheets
1 onion, diced
2 cups mushrooms, diced
1 cup frozen green peas
1 egg
25 g butter for greasing tray
cooking oil
2 tbsp curry powder
salt
2 tbsp soy sauce
Method
1. Preheat oven to 175 degrees celcius
2. Grease trays with pie moulds with melted butter
3. Fry onions till caramalised.
4. Add in mushrooms and peas to the pan and cook them well.
5. Add curry powder and mix well.
6. Add salt and soy sauce to the ingredients. Stir well.
7. Leave to cool.
8. Cut each pastry sheet into 6 squares.
9. Line each mould with a pastry square. Use your fingers to shape each pie shell into rounds.
10. Fill in each lined mould with cooked ingredients.
11. Cover each filling with a pastry square.
12. Use a fork to press the border of each pie for presentation.
13. Glaze each pie with whisked egg.
Serve while hot. Makes 15 pies.
The pies are excellent for tea time or for small family get-together sessions.
