Rick Stein is one the world’s renowned chefs whom I truly admire due to his adventurous palate and fiery passion for cooking. I’ve faithfully watched most of his cooking programmes shot in England, the Far East and Mediterranean.
Rick Stein’s adventurous spirit and deep passion for food is apparent in his cooking programmes. Despite being a celebrity chef, he has a burning desire to keep on learning from other ordinary, unknown chefs who whip up the best tasting local food in the region. It is insipring to watch Rick fervently jotting down recipes in his little notebook he carries with him in his travels in order to experiment the dish or reinvent new ones.
The recipe for a dish called Pasta ala Dorma shown in the youtube above is simple yet authentic, using aubergines as the main vegetable. This can be substituted with any other vegetables in season such as shitake mushrooms or parsnips or radish. For that added flavour, olives or anchovies can be added. The list of possiblilities is endless.
Adding chilli flakes gives the dish some zest without it overpowering the tanginess of the tomatoes. Something that is worth noting is the use of fresh tomatoes without paste or sauce. Rick Stein never fails to amaze me with his creativity.
