A wholesome meal is a balanced meal comprising carbohydrate, protein and vitamins. This special dish I’d like to introduce involves potatoes done in quite an interesting way. Heard of smashed potatoes? The name itself does not sound appetizing. The irony is that smashed potatoes, despite their name, are deliciously divine. Baked with the skin intact, the potatoes give off a kind of tasty crispness that makes you reach out for more.
Smashed potatoes recipe
Ingredients
Small whole potatoes
Shredded parmesan cheese
20g melted butter
Pepper and salt to taste
Chopped parsley
Method
1. Pre-heat the oven at 200 degrees Celsius.
2. Wash potatoes thoroughly.
3. Place potatoes in a Casserole Dish and bake them with skin intact in the microwave oven for 6-8 minutes.
4. Remove potatoes from the microwave oven and use a Potato Masher to crush each cooked potato gently so it appears flattened.
6. Grease tray with melted butter and place each smashed potato in neat rows on the tray.
7. Sprinkle salt and pepper on the potatoes to taste.
8. Optional – add shredded cheese on each potato.
9. Add chopped parsley on each flattened potato.
10. Bake for 25 minutes in the oven.
Serve potatoes with pan fried salmon and stir fry baby spinach and red capsicum on the side.
The result is divine. You can have restaurant quality meal in the comfort of your home. Since preparation time takes about an hour in all, this meal can better be enjoyed on weekends.
