Potato filling
Breakfast is considered the most important meal of the day as food that is taken first thing in the morning provides fuel for us to function for the rest of the day. Nutritionists often advise that one should not skip breakfast and eat something light at least if the usual toast, egg and hash browns are not readily available. Pancake is a common breakfast option on weekends for many. Instead of eating the usual pancake dripped with gooey maple syrup, here is a recipe on cooking pancake with a twist. Adding some filling to the pancakes and present them as rolls will add some novelty to the dish.

Ingredients
Pancake batter
1tbsp. cooking oil
1 cup plain flour
1 tsp. baking soda
1 egg, whisked
3/4 cup milk
2 cloves garlic, chopped
1/2 inch ginger, chopped
2 green chilli, chopped
Filling
1 tbsp. cooking oil
3 potatoes, diced
1 onion, chopped
handful of cumin seeds
Method
1. Prepare the filling by peeling potatoes and dicing them.
2. Parboil potatoes or cook them in the microwave for 6-8 mins
3. Peel and dice onions and set aside.
4. To prepare the batter, chop garlic, ginger and chillies and set aside.
5. Add flour and baking soda in a mixing bowl.
6. Add whisked egg and milk.
7. Combine ingredients by mixing thoroughly.
8. Add garlic, ginger and chillies into the batter.
9. Heat oil in a pan and add cumin seeds.
10. Add onions and cook till they caramelise.
11. Add potatoes and mix the ingredients thoroughly.
12. Set the cooked mixture aside.
13. To cook the pancake, heat some oil in a pan.
14. Pour in the batter and cook on both sides.
15. Once each pancake is cooked, remove it from the pan and lay it on a plate.
16. Add cooked filling and roll each pancake up.
17. Serve with cold yoghurt.
