When you think of salad, you would think of green vegetables, right? Well..not necessary. Grains, beans, peas and root vegetables can be made into a salad too. I prepared chickpea and greenpea salad recently and believe me…it tasted really good. Here’s the recipe.
Ingredients
1 can chickpeas
1 can greenpeas
3 tbsp hummus
1 flat tsp harissa
Method
Pour out chickpeas and green peas in a bowl.
Add hummus and harissa.
Mix thoroughly.
Chill the salad in the fridge and serve a few hours later.
If you have more time on your hands, you can use boiled chickpeas and use frozen green peas in the salad.
This salad can be eaten on its own…I must say it is addictive. So be warned. The hummus and harissa mix is a perfect combination but be sure not to add more than a teaspoon of the fiery harissa paste as you don’t want it to over power the salad.
The sweetness of the green peas and wholesomeness of the chickpeas work very well with the hummus harissa mixture. It’s perfect to be served as a side dish or eaten on its own. Also great for wrap filling. Trust me on this!
