This tasty stir fry vegetables with ravioli dish is a time saver on busy or lazy days. It is not only quick and easy to prepare, but also delicious and nutritious. Use a variety of seasonal vegetables for a hearty meal.
In this dish, I use Rana Ravioli Porcini Mushroom. Porcini are brown-capped mushrooms with thick, white stalks. This ravioli is delicious even when eaten on it’s own. I buy a few packets containing various ravioli fillings and freeze them. When I need to use the ravioli, all I do is to thaw them. To cook, I either use the microwave or heat the ravioli in a pot of water on a stove. Once cooked, I drain the water and leave the ravioli aside to cool.
Ingredients
1 onion, sliced
200g mixed vegetables
150g cheery tomatoes, sliced
250g shitake mushrooms, sliced
bay choy, sliced
oyster sauce, 2 tbsp
2 tbsp olive oil
1/2 cup liquid vegetable stock
2 tbsp soy sauce
pepper to taste
1 tsp ikan bilis stock
2 fresh red chillies, chopped
Method
Thaw mixed vegetables and place them in a bowl of water. Pop the bowl in a microwave and heat for 3 mins or until cooked. Set aside to cool.
In a frying pan, pour olive oil and heat over medium heat.
Add the onions and fry till transparent.
Add chillies and then pour in the mushrooms and fry till they sweat.
Then, add cherry tomatoes and mixed vegetables and stir thoroughly.
Finally, add the bak choy or leafy vegetables.
Now add liquid vegetable stock, followed by powdered ikan bilis stock. Stir the ingredients so they blend well.
Add oyster and soy sauce, mixing the ingredients thoroughly each time the sauces are added.
Add pepper to taste.
Let the ingredients simmer for 5 minutes.
Turn off heat and plate the ravioli. Then add the stir fry vegetables on top of the pasta.
Serve and enjoy.
You may notice that I use olive oil in my cooking as it is a healthy option. My favourite is LaDiva Pomace Olive oil. It is ideal for deep frying and stir frying and is cholesterol and trans fat free. So it surely ticks all the boxes for this dish.
I add chilies in my dishes for that extra kick. The powdered ikan bilis or anchovy stock is a secret ingredient of mine that never disappoints. It just lifts the flavour of any dish. I get this trusty ingredient from the supermarket or Asian grocery.
I would recommend adding any seasonal vegetables instead of mixed vegetables. Needless to say, the latter is convenient for busy days. Capsicum and long beans are also great options.
For protein, my go-to is always tofu and/or tempe since I’m not a meat eater. If you take meat, then the list of protein you can add on to the dish is endless.
This easy stir fry vegetables with ravioli dish is ideal especially in winter or on cold, rainy days. It is hearty and filling. I’ll make a mental note to stock up more raviolis for other busy days.
