I feel like having sweet potato for lunch today and thought it would be a good idea to have it in a sandwich. So I got my ingredients together and started to boil the tubers. Once they have been boiled, I peeled the skin off and cut the soft flesh into thin slices. Voila! The result was satisfying.
I cut two slices of linseed soy bread. Then I spreaded avocado on one side. Next, I placed a slice of Coon cheese (my favourite) on the avocado spread, a few slices of tomatoes and several slices of boiled sweet potatoes. Then I sprinkled some pepper and top the ingredients with the other slice of bread. Finally, I cut the sandwich into half and it was ready to be eaten.
What a great meal to have on meatless afternoons! The carbohydrate in the bread and sweet potatoes will fill me up till dinner. Love the combination of sweetness in the tuber, cheesiness of Coon, creaminess of the avocado and crunchiness in the tomato. Oh now what? A ginger and lemongrass tea to wash down the meal?
