Healthy Curry Noodles

Healthy vegetarian curry noodles are unsurprisingly easy to prepare. The only hassle one has to put up with is searching for the right pre-prepared curry paste and noodles.

I love preparing curry from scratch. The reason is, I get to choose the quantity of ingredients and I can control what goes into my curry. These days, I lack time to cook as I’ve started a jewellery business on etsy alongside my teaching job. So I look for short cuts that don’t compromise on health. My secret is this…I use Brahim’s Curry Chicken Paste. I’ve used the paste before and have not regretted it since. If you don’t take meat, don’t fret. Brahim’s curry paste doesn’t contain any meat products. If it says Chicken Curry, then it’s meant to be cooked with chicken. Brahim’s curry chicken can be found in NTUC supermarkets in Singapore or Asian grocery shops overseas. If you can’t find the exact brand, try scoping around for another that is to your liking.

When it comes to noodles, it can be tricky to find the healthier version. Just wander down the supermarket aisles and you’ll be greeted with commercial instant noodles like Maggi Mee or Indo Mie. For the heart healthy version, I recommend the Simply Natural Organic Noodles range. This range offers all kinds of organic handmade noodles including spinach, pumpkin, beetroot and carrot, to name a few. I’ve tried its spinach range and I must say, it’s tasty. It pairs well with the curry.

Ingredients

2 tbsp olive oil

1 large onion, sliced

8 cherry tomatoes, halves

250g Brown Swiss or Portobello mushrooms, sliced

3 small red chilies, sliced

pepper to taste

1/2 cup of water

1 egg, boiled

half packet of Simply Natural Organic Spinach Noodles

Method

  1. Heat olive oil in a pan over medium heat.
  2. Add onions and fry till caramalised.
  3. Add chilies and mushrooms, till the latter sweat.
  4. Add cherry tomatoes.
  5. Sprinkle pepper to taste and mix well.
  6. Add curry paste and some water to dilute the curry to you liking.
  7. Stir mixture thoroughly.
  8. Turn the heat down and let the curry simmer for another 5 minutes.
  9. Turn off the heat and serve the curry on a plate of noodles. dd boiled eggs and garnish with coriander.

To prepare noodles, take half of the contents and place it in a small sauce pan. Add boiling water and let the noodles soften in the water for 15-20 minutes. Lift noodles with a fork every now and then to separate the strands. Drain the water once noodles have softened.

You may wish to add potatoes to the curry if you can deal with boiling and pealing them. They sure enhance the flavour of the curry.

This meal is super easy and quick to prepare. It has been my go-to lately when I crave for curry, especially healthy vegetarian curry noodles.
