Ingredients
4 slices of bread
1 ripe avocado
2 eggs, hard boiled
100g spinach
3 tbsp hummus
1 tsp dijon mustard
pepper to taste
Method
Cut 4 slices of rustic bread. Ensure each slice is not too thin.
Dry fry spinach in a pan till it wilts. Set aside.
In a bowl, mash avocados and egg with a fork. The mixture consistency should be coarse.
Add hummus and dijon mustard and blend the ingredients together.
Sprinkle pepper to taste and mix.
Thickly spread the mixture on one sandwich slice. Add wilted spinach on top.
Cover with another slice of bread. Cut sandwich into half.
Serve and enjoy!
Makes 2 sandwiches
For added flavour, I would recommend adding a slice of cheese before spreading the mashed mixture. For added cheesiness, add another cheese slice on top of the spinach heap before covering it with another slice of bread.
