PLAIN AND SIMPLE FRIED RICE

Left over food shouldn’t be discarded. There are many simple meals that you can dish out using leftovers. I had some left over rice from last night and didn’t want to waste it. The rice was just sufficient for one meal. Feeling peckish at just before noon, I decided to put my creativity to good use. There were some leftover sliced onions and diced mushrooms from yesterday’s omelette for breakfast. These could be used for my simple fried rice meal. Kecap manis or sweet ketchup should not be left out in a tasty fried rice dish. Kecap manis can be bought at any large supermarkets under the ‘Cooking Sauces’ section. It is undeniably an essential ingredient for tasty Indonesian-style fried rice.

Fried Rice

Ingredients

one tbsp grapeseed oil
one cup leftover rice
half onion, sliced
some mushrooms, diced
one egg
1/4 cup green peas
2 tbsp kecap manis (sweet ketchup)
pepper

Method

1. Heat oil in a pan.
2. Fry onions till transparent.
3. Add mushrooms and green peas and stir till cooked.
4. Break one egg and scramble it in the pan with the ingredients.
5. Add a dash of pepper and stir well.
6. Add rice and stir well.
7. Add kecap manis and pepper and stir mixture well.

Serves one.

Voila! The dish is so tasty and satisfying. It all boils down to the self-satisfaction that I get from creating another dish, a simple one, using leftover ingredients to prevent wastage. For variation, add salad on the side or fry a separate sunny side up that goes well with the rice. Garnish with fried shallots.

  1. Thanks for the recipe. I’ve not used kecap manis before and am willing to try it. Will look for this exotic ingredient in the local shops.
