On weekday nights, I usually prepare quick simple meals simply because of time factor. I wouldn’t want to spend too much time in the kitchen after a day’s work. All I want to do after a hectic day is to have a nice meal and then just chill out before bed. So easy-to-prepare meals are the answer.
The ideas below are useful weekday night meals for two or for the whole family:
1. Latina pasta selection and Leggo’s pasta sauce
My favourite is the spinach and ricotta Agnolotti and Fresh Napoli sauce. Fry sliced onions and mushrooms and then add Leggo’s Fresh sauce of your choice. Pour sauce over cooked al dente pasta. It’s that simple.
2. Fish fingers and vegetables
Grill frozen fish fingers and serve them with cut steamed carrots, brococoli and potatoes. Takes just 20 minutes to prepare.
3. Stir fry vegetables and beef slices
Stir fry onions, cauliflower, sliced snowpeas, mushrooms and beef slices. Serve with steamed white rice. The meal is well-balanced and fuss free.
4. Garlic prawn pizza
Prepare pizza dough in advance. Thaw frozen dough when needed. To make pizza dough, pour 2 cups pizza flour in a bowl. Then mix one sachet yeast with 1 teaspoon sugar and a pinch of salt in a small separate bowl. Make a well in the flour and pour in the yeast mixture. Knead it and then roll half the dough thinly. Line the rolled out dough in a greased casserole.
Heat oil in pan. Fry garlic and then add prawns in the pan. Spread tomato paste on the dough and then add the garlic prawns. Optional: Add fried onions before the cooked garlic prawns for enhanced flavour . Cover with mozzarella chesse. Cook at 220 degrees for 30 minutes. Voila! You have a simple-to-prepare sumptous pizza for dinner.
