Moist Banana Cake

Banana cake when baked well tastes wholesome. I’ve learnt to make fool-proof banana cake the easy way. The rule of thumb is to use four bananas for the cake. Anything less will be bland and anything more will be gooey. My secret ingredient is the sour cream which enhances the flavour of the cake. 

Here is my recipe for moist banana cake:

Ingredients

1 ½ cups plain flour

1 tsp baking soda

4 bananas, mashed

1 ¼ cups caster sugar

2 eggs

115 g butter

½ cup milk

250g light sour cream

40g crushed walnuts

1 tsp olive oil

Method

1. Pre-heat the oven at 180 degrees Celsius.

2. Grease baking tin with butter.

3. Mash bananas in a separate bowl.

4. Cream butter with sugar and combine well.

5. Sift flour and baking powder in a separate bowl.

6.  Add the butter and sugar mixture to the flour.

7. Add eggs and mix well.

8. Add milk, sour cream and bananas.

9. Add walnuts and mix well.

10. Add olive oil for added moisture.

11. Blend ingredients well.

12. Pour mixture in baking tin.

13. Bake for 60 mins.

The result is a delicious home-made banana cake. If you or a family member has nut allergy, it is best to forgo the nuts. Unlike banana bread, it’s best eaten cold when the flavour can be savoured better.
