Tired of having cereal or toast for breakfast? Why not be adventurous and try something different? Prepare scrambled eggs in a different way and combine them in salsa sauce for a hint of Mexican flavour. Include spring onions to bring in an Asian influence and include potatoes for a Western flair. Sounds a bit mishmash? You will be surprised with the wholesome flavour of this wonderful meal.

Ingredients

cooking oil

2 eggs

7 tbsp. milk

1 green onion, chopped

handful of coriander

3 small potatoes

salsa sauce

hot sauce

pepper to taste

jalapeno or 2 red chillies, chopped

shredded cheese

tortilla

Method

1. Peel and microwave potatoes till cooked.

2. Fry cooked potatoes in a pan till lightly browned. Remove and leave aside.

3. Heat oil in the same pan.

4. Add eggs in the same pan and scramble them with milk.

4. Add green onions, coriander and jalapeno/red chillies.

5. Add pepper and mix the ingredients well.

6. Heat tortillas for 30 seconds in the microwave.

7. Spoon cooked ingredients on each tortilla.

8. Add potatoes on the cooked ingredients.

9. Top potatoes and cooked ingredients with salsa sauce and shredded cheese. Add a dash of hot sauce if you prefer the extra kick.

10. Enjoy every bite.

The salsa sauce, hot sauce and chillies or jalapeno add zest to food. This meal can be enjoyed at any time of the day. It is filling and satisfying. Most of all, it’s fuss-free.
