SPECIAL OMELETTE WITH ZAATAR HERBS

Special Omelette with Zaatar Herbs

Omelette can be made interesting by using a variety of ingredients. I like to be creative when I prepare food, so I make sure to use a variety of ingredients to make sure there is colour and some texture. I also try to add spices or herbs in my cooking to enhance the flavour of my food. One of the herbs I’m currently experimenting is zaatar. It gives the flavour of food a whole new level.

Most importantly, there must be optimum nutritious value in the food I prepare.

The Recipe

Ingredients

2 or 3 eggs, cracked and whisked

handful of spinach

100g mushrooms, sliced

cherry tomatoes, halved

1 onion, sliced

50g feta cheese, crumbled

cooking oil

1/4 cup of milk

pepper

zaatar herbs

Method

  1. Use a non-stick pan and add some cooking oil.
  2. Add onions and fry till brown.
  3. Add mushrooms and let them sweat.
  4. Add spinach and let it wilt.
  5. Then add tomatoes and mix the ingredients together.
  6. Add feta cheese. Mix well.
  7. Whisk eggs in a bowl. Add milk, pepper and zaatar herbs. Whisk them all up with a fork.
  8. Add the eggs into the pan and let the egg spread.
  9. Leave the omelette to cook on one side. If there is additional egg glob on top that has not cooked, you may want to dip this in a small bowl and pour it into the pan after overturning the omelette.
  10. Use a spatula to loosen the omelette off the pan and then overturn the pan and tip it onto the plate. This is tricky so do it carefully.
  11. Pour the egg residue in the bowl into the pan so it cooks.
  12. Return the omelette back to the pan by gliding it slowly so the other side is cooked.
  13. Once the other side is cooked, divide the omelette into 2, 3 or 4.
  14. Serve it on buttered toast.

Cooking Tips

The feta and zaatar herbs give the omelette added flavour. Adding milk will moisten the omelette and make it easier for it to glide off the pan and be transferred onto the plate.

You can add shrimp, scallops or anchovies to your omelette if you like. Omelette need not be boring. Use left over vegetables in your fridge and before you know it, you would have prepared a colourful and flavourful omelette your family will love.
