SPECIAL FUSION TOFU SALAD

Fusion Tofu Salad

Tofu is a great source of protein. Pairing it with tasty sauce or condiment will definitely lift it to a whole new level. No longer will tofu be bland. I’ve re-created a version of salad tofu I have had before and the result is sensational. I’ve named it fusion tofu salad – a bridge between east and west. Without further ado, here are the ingredients I used.

Ingredients for Salad

handful of fresh spinach

8 cherry tomatoes, sliced into halves

half avocado, sliced

1 pkt tofu, fried

150g shitake mushrooms, sliced and sauteed

2 peeled mandarin oranges

handful of pepitas

handful of sunflower seeds


handful of Mission tortilla chips

Ingredients for Salad Dressing

1 clove garlic, chopped

2 fresh Cayenne chilies, chopped

1 tbsp kicap manis

2 tbsp soy

juice of half lemon

Method

Lay out the spinach in a medium sized plate

Spread the tomatoes, avocado slices and mandarin orange segments evenly on the plate

Then, add tofu and mushrooms and spread them out evenly

Add pepitas and sunflower seeds

Decorate the plate with tortilla chips

For the dressing, mix all ingredients in a small covered container. Add soy and kicap manis. Mix the ingredients thoroughly and store in the fridge.

If you prefer chili sauce, you can add 2 tbsp of sweet Thai chili sauce and lemon juice. Mix thoroughly. If spicy dressing is not your cup of tea, try avocado dressing instead.

The overall result is an explosion of flavours. The mandarin oranges add a dash of sweetness, avocado tickles the palate with some creaminess and the seeds as well as chips add some crunch.

Well-balanced, this fusion salad offers plenty of nutrition and is pretty filling. You can use alfalfa sprouts in place of spinach and add refreshing cucumber and fleshy olives if you like. One things’s for sure. You’ll get plenty of nutritional goodness!
