This special home made baked beans recipe is easy to follow, using everyday ingredients. The bonus is that this home cooked baked beans dish is nutritious and tasty. I have had disappointing experiences of tasting blandly prepared baked beans for breakfast in hotels as part of their package. I feel that hotel catering can do better to whet the appetite of hungry guests by taking just a little more effort in introducing a few simple ingredients.
In this home made baked beans dish, I use vegetables and eggs. It is seriously delicious and I won’t be surprised if the family make their way to the pan for second helpings. You can use any brand of baked beans. My favourite is none other than Heinz. The best part about this recipe is that it takes 8 minutes at the most to prepare and serve.
Ingredients
1 tbsp olive oil
1 tin baked beans
1 onion, chopped
200g cherry tomatoes, sliced
1 egg
250g spinach
pepper to taste
1 slice Kraft cheese (optional)
Method
Heat oil on medium heat in a pan or wok.
Add onions and cook till transparent.
Next, add tomatoes into the onions and let them soften and the skin begins to wrinkle.
Whisk egg in a bowl and add pepper.
Introduce whisked egg to the onion and tomato mixture. Stir the egg with the mixture till the former breaks and cooks.
Pour baked beans into the mixture and sprinkle pepper. Stir thoroughly.
At this stage, add sliced cheese if you like and stir it, letting it melt into the mixture.
Finally add spinach and stir through till it wilts.
Simmer the mixture for a minute.
Turn off the heat and serve!
You’ll notice that I don’t add salt to my cooking. As I’ve cut down on salt (and sugar) in my diet, I believe that pepper will suffice. Factually speaking, the baked beans contain more than enough sodium that adding extra is unnecessary.
By letting the tomatoes wrinkle, the flavour of the baked bean mixture is enhanced. Adding cheese will lift the mixture to another level as a hint of cheesiness is introduced.
You can have this special home made baked beans dish on its own or on a piece of toast. Also, feel free to add other vegetables such as asparagus and broccolini for added vitamins and crunch.
