SAVOURY FRUITY FRENCH TOAST BREAKFAST RECIPE

I enjoy preparing savoury fruity French toast when I’m tired of the usual omelette or avocado on toast on weekend mornings. The intermingling of sweetness and savouriness in the French toast creates an explosion of tastes as it excites the taste buds, bringing breakfast to a new level.

It’s great if berries are in season as this savoury fruity French toast requires a mixture of blue berries and raspberries. Or else, frozen berries will do the job.

Ingredients

1 punnet blue berries

1 punnet raspberries

a few slices of bread

2 eggs, whisked

1/4 cup lite milk

1tbsp olive oil

pepper to taste

Greek yoghurt

Method

Crack eggs in a bowl. Add milk and pepper. Whisk and set aside.

Heat oil in a pan at medium heat.

While the oil is heating, prepare the filling for the toast. Place raspberries and blue berries on a slice of whole meal bread. Add as little or as much berries to your liking. Then place another slice of bread on top to cover.

Place the fruity sandwich on the pan and pour the whisked egg on one side. Quickly but gently flip the egg covered slice so it touches the oil.

In the meantime, pour whisked egg on the other side of the sandwich and quickly but gently flip it so the egg on that side cooks as well.

Once both sides are brown, remove the French toast and repeat the process till all bread slices have been used.

One punnet of berries makes 3 to 4 slices depending on how many berries are used per toast.

How to Plate

Cut each toast into halves. Place the two halves on a plate. Garnish the plate with a few berries and add a dollop of Greek yoghurt on one side or on top of the berries.

Serve and enjoy!
