A pie can be easily prepared so long as there are puff pastry sheets in the kitchen. The best thing about a pie is that you can prepare all sorts of filling, meat or vegetarian. In this post, I’m going to share with you my spinach and cheese pie recipe.
Ingredients
10g margarine or butter, melted
250g ricotta cheese
100g parmesan, grated/shredded
100g cheddar, grated/shredded
1 packet frozen spinach
2 eggs
Puff pastry
1 large onion, sliced
Cayenne pepper
Black pepper
Cooking oil
Method
1. Pre-heat oven at 180 degrees Celsius.
2. Grease casserole with margarine/butter
3. Layer 2 puff pastries on the bottom of the casserole
4. Spread margarine/butter on each layer
5. Meanwhile, caramalise onions in a pan
6. Thaw the frozen spinach in the microwave
7. In a big bowl, mix thawed spinach and ricotta
8. Whisk eggs in a separate bowl and pour them into the mixture
9. Add pepper to the mixture
10. Spread caramalised onions on the pastry
11. Then spread the spinach, ricotta cheese and egg mixture on the onions.
12. Spread parmesan and then cheddar cheese or vice versa on the mixture.
13. Add a dash of cayenne pepper and black pepper
14. Cover the ingredients with a pastry layer
15. Brush margarine/butter on the pastry
16. Use a knife to make criss-cross patterns
17. Bake at 180 degrees for about 50 minutes
I prefer to substitute butter with margarine for health purposes. The cayene pepper adds a hint of savouriness to the pie. This dish is best served for lunch or dinner.
