CRAB MEAT AND PASTA SALAD

This is a special salad I like to take on a picnic. It’s simple and fool-proof. Kept in an Esky, it  stays fresh for hours.

Ingredients

Crab Meat, shredded

Macaroni

Green Capsicum, sliced

Mayonnaise, 2 tbsp

Juice of half a lime

Pepper

Cayenne Pepper

Method

1. Boil a pot of water and add macaroni till el dente.

2. Thaw frozen crab meat.

3. Shred thawed crab meat and heat it in the microwave for 2 minutes.

4. Add cooked macaroni, capsicum, mayonnaise and lime juice to crab meat. Mix well.

5. Add pepper and cayenne pepper to taste.

6. Mix thoroughly and chill.

 This is a refreshing salad and tastes good with a zest of lime juice. Pepper and cayenne pepper provide a savoury twist to the salad.
