POTATO CUTLETS

 

Potatoes are versatile.  If you are sick of mashed or baked potatoes, try making potato cutlets. There are so many variations of these but the one I like best is the simple version. 

 Ingredients

 4 potatoes, peeled

1 sprig spring onion, chopped

 Pepper

Fried shallots (ready made)

Egg

Cooking oil

 
Method

 1. Peel potatoes and cut them into quarters.

2. Cook them in the microwave oven for 6-7 minutes till soft.

3. Remove potatoes from the microwave oven and mash them.

4. Add spring onions and fried shallots.

5. Season with pepper.

6. Fold all the ingredients together with the mashed potatoes with hand.

7. Shape mashed potatoes into balls.

8. Press each ball gently to slightly flatten them into cutlets. 

9. Beat an egg in a bowl and coat each cutlet with egg.

10.  Heat oil in a pan.

11.  Fry cutlets till brown.

The cutlets can be eaten with rice and gravy or on its own with tomato or chilli sauce. For variation, add minced beef  in the mashed potatoes for added flavour.
