HOME COOKED BAKED BEANS ON TOAST

I love baked beans. No, don’t get me wrong. I loathe consuming baked beans straight from the can. Instead I add fresh ingredients to canned baked beans to make them not only edible for my palate and acceptable to my taste buds but also spin it to a whole new level. And the result is finger licking good so much so it is tasty enough to devour from the bowl itself. So how do I do it? Well…read on. 

If you have a can of bread, baked beans, tomatoes, egg, onions, those are all that you need for a satisfying breakfast. However, in this recipe I will show you how to cook the best home cooked baked beans using extra ingredients to whet the appetite. 

Ingredients 

1 can baked beans

1 onion, sliced

handful of cherry tomatoes, sliced

a handful of spinach

pepper

feta cheese, crumbled

1 egg

2 slices of whole meal bread

margarine

oil

Method 

1. Heat oil in a pan. 

2. Add onions and fry till caramelized. 

3. Add tomatoes and spinach and mix ingredients well. 

4. Make a well and crack an egg into the mixture. Keep on stirring the egg till it cooks and mix it thoroughly with the ingredients. 

5. Add pepper to taste and mix well. 

6. Remove contents by emptying it in a bowl. 

6. Toast two slices of bread in a toaster. Once toasted, lightly spread margarine on each side. 

7. Scoop home cooked baked beans with a spoon and spread it on each toasted slice. 

8. Sprinkle crumbled feta on baked bean topping. 

9. Enjoy.

The result is a delicious, filling and healthy breakfast. I use feta because of its low calorie content compared to other cheeses. You can use Parmesan or any strong cheese if you like. I find that adding an egg gives it more body and flavour apart from benefiting in its nutritious value. A suggestion is to prepare a home cooked baked beans sandwich and then press the bread slices in a sandwich press. The toasted bread slices give your taste buds that added crunch as the baked beans ooze out of the toast. Another suggestion is add separately cooked sliced asparagus on the baked bean spread without it going through the sandwich press for that extra crunch and vitamins. The possibilities are endless.
