From experience, if you’d prefer brown rice, you should go for the special sushi brown rice instead of the ordinary version. The normal brown rice doesn’t stick no matter how much sushi vinegar I add. Perhaps it lacks starchiness to glue the grains together?

Instead of using a nori sheet to wrap the rice, you can roll it on sesame or nigella seeds. You can be as creative as you want.

The sushi must be eaten within two days if kept in the fridge. It will harden after that time frame and won’t taste as good as the moisture is lost.
